Raw Food Dessert Recipes

Does it mean that when you change your diet for one that is based of raw fruits and vegetables that you will have to give up desserts, even for special occasions? Hardly so! Be relieved that it is possible, using the natural foods available to us, to create a variety of vegan treats that not only will satisfy your desire for desserts, but will also be healthy for you!

Coconut Cream

1 cup soaked pine nuts
1 cup fresh, shredded coconut *
2 Tbs. honey, or maple syrup
6 soaked apricots

Blend all ingredients in a food processor or heavy-duty blender. Serve as a dip with fruits, or on top of a raw pie. You can also purchase unsweetened coconut that is available in most health food stores.

* To make shredded coconut, buy the “mature” coconuts (the brown ones sold in most markets), crack them open, remove the white hard meat, and shred in a food processor, a Champion juicer, or by hand with a grater.

Sunshine Pudding

1 cup soaked cashews
3/4 cup orange juice
1 cup dates, pitted

Blend all ingredients, or put into a food processor. Add some additional orange juice if necessary. Consistency should be creamy.

Chocolate Pudding

2 cups soaked cashews
1 cup pitted dates
1 cup soaked raisins
5 Tbs. carob powder
1 cup water, or nut milk

Blend all ingredients together. You may also use a food processor to make this recipe.

Lemon Pudding

2 cups avocado, mashed
1 1/2 cups lemon flesh, without peel and seeds
1 lemon, juice of
2 cups pitted dates
4 Tbs. maple syrup, or honey (optional)

Peel lemons with a knife. Cut them in half, and begin to slice them. Remove seeds as you encounter them. Blend the lemon flesh with the mashed avocado, dates, and lemon juice. A food processor works well for this. If desired, add some maple syrup or honey. This will be the best lemon pudding you will ever taste!

Fudge

2 cups soaked cashews
1 cup pitted dates
1 cup soaked raisins
4 Tbs. carob powder
1 cup water
1 cup ground flax seeds
1 cup walnut pieces

Blend soaked cashews, dates, raisins, carob powder, and water together in food processor or heavy-duty blender (you can also use a Champion or Green Power juicer with blank plate on). Pour into a bowl. Measure one cup of flax seeds and grind in coffee grounder (you will have to grind 1/2 cup at a time). Mix in with the “chocolate” mixture along with the walnut pieces. Spread in a rectangular tin, then freeze for a few hours. Cut in rectangles, then serve!

Carob Treat

2 cups avocado, mashed
2 cups dates
1/2 cup carob powder
4 Tbs. maple syrup (optional)
water, as needed for consistency

Blend all ingredients in a food processor or heavy-duty blender. You may also use a food processor. Add the avocado first, then the dates, then the rest of the ingredients. Use water, if needed, to reach desired consistency.

Real Chocolate

2 cups avocado, mashed
2 cups dates
4 Tbs organic cocoa powder
water, or nut milk
maple syrup

Try this vegan chocolate recipe the next time you have a chocolate craving, if you don’t object to cocoa powder.

Vanilla Custard

2 cups young coconut flesh
1 cup pitted dates
1/3 cup coconut water
1/2 tsp. pure vanilla extract

Blend all ingredients together until totally smooth. You may use a food processor for this. Can be eaten plain, or with fresh fruits. Serve as a cream poured over a bowl of berries for a great treat. Serve in individual bowls with a mint leaf for garnish. Better than any commercial vanilla pudding out there!
