How to Make Living Pies

Who said that pies had to be cooked? The best pies I have tasted were raw pies. Raw pies are so rich in flavor, that it may surprise you. This is so because all the vitality in the fruits and nuts used in the pies is still intact, and their flavor incredible.
The idea behind the raw pie is simple. First, you will have to use a typical pie container, ideally a glass one. Second, you will make a crust out of nuts and dates, and fill it with a fruit mixture. Often we can top the pie with a sweet topping made out of nuts and dates (or maple syrup, or honey).THE CRUST
To make the crust, we usually use soaked nuts and dates, or other dried fruits, and blend these in a food processor. It is quite hard to make the crust any other way, because the food processor is the only tool that really creates the crust consistency that we want with the nuts. The crust "dough" is pressed into a glass pie container, which is put in the freezer for an hour or two.BASIC CRUST RECIPE
2 cups walnuts
1 cup soaked almonds
10-15 dates
2 Tbs. orange juice
Put the nuts in the food processor with the dates. Blend them, while adding the orange juice. You should end up with a big ball of sticky nut mixture. If you run the nuts through a Champion juicer, you will obtain a nut butter consistency, which is not what we want. If you do not have a food processor, you may also grind the nuts in a Vita-Mix, a little at a time, and place the mixture in a bowl to be mixed with the dates by hand.Once you have obtained your crust dough, you will press it inside, and all around, the pie container with your wet fingers. Make it look like a normal pie crust. You may need to dip repeatedly your fingers in water to prevent the dough from sticking to your fingers as you spread it. Then we usually place the pie container in the freezer while we prepare the rest of the pie.
PIE FILLINGS
Pie fillings may be made out of anything sweet. You can fill the crust with sliced bananas topped with sliced fruit, and top it with a sweet topping. Or you can blend fruits, such as papayas and mangoes, along with some nuts to thicken the mixture, and pour this mixture inside the pie before freezing for an hour. You can also make a thick, sweet pie filling out of dates and nuts, such as pecans, and flavor this with cinnamon or cloves. Then pour the sweet mixture into the pie crust, and decorate with pine nuts, macadamia nuts, shredded coconuts, slices of fruit, or berries. You could also create a combination of everything I mentioned, and make a layered pie. Just be creative, and get inspired by the pie recipes that I provide. For an amazing taste, add a creamy, sweet topping to your pie. You can also top your pie with sliced fruit or whole berries. Leaves of mint can also be used to decorate a pie.
